Info Exquisite grappa Prosecco 38% 70cl

The Exquisite Grappa Invecchiata Prosecco derives from the fragrant pomace of the Glera, a grape used for the production of Prosecco, the best known Italian sparkling wine and known in the world for its freshness, its elegance and its versatility.

The skins of its golden berries are the raw material of this grappa which is produced in three stages of distillation carried out at different temperatures and in traditional copper stills, which allow vacuum processing (greater protection of the aromas) and in which heating takes place at bain-marie (indirect system and therefore more delicate) allowing to preserve the aromatic fullness and the fragrance of the starting grapes. It is then aged for 12 months in oak barrels which are produced with techniques of great tradition: the freshly cut wood is left to dry in the open air for a minimum period of 24 months during which there is a loss of the water contained in it and an elimination of the more astringent tannins. The staves are cut, assembled and then intensely toasted. During the aging process in these oak barrels, chemical and physical reactions take place which give the distillate a more complex bouquet, a softer taste and a typical amber colour.
