For this Grappa, the remains of the famous wine Amarone were used. The product that remains still contains alcohol and when water is added, this alcohol is absorbed into the water that can then be distilled immediately. The distillation process takes place under a vacuum, the temperature can therefore be kept lower because the evaporation of alcohol will take place faster. This method creates more delicate and fine aromas. The raw material, in this case quality grapes used for the Amarone, will speak much more and result in an extremely complex grappa.
