The Valpolicella of Il Monte Caro is a young wine obtained solely from Corvina, Corvinone and Rondinella harvested by hand at the beginning of their moment of maturation, gently pressed. The fermentation lasts about 7 days by controlling the temperature of the tanks and without adding any chemical component such as enzymes, tannins or yeasts.
This wine is aged in steel. The color of our Valpolicella is a lively ruby red. All the scents remind us of fragrant red cherries, accompanied by a delicate herbaceous note. Freshness is its first peculiarity and is well supported by a pleasant sapidity. The 2019 vintage marks for us the beginning of a zonal study on the phenolic ripening of the vines and this has led to a greater roundness in the glass.
