The juice was cold macerated for several hours. Then the fermentation starts with its own yeast culture in used French oak barrels of 220L. Only 1 barrel was made from this wine and so only 274 bottles were available. After the fermentation, the wine remained in the barrel for another 8 months. The result is a surprising Chardonnay due to its pronounced mineral character, the wood maturation that gives the wine an extra smoky character and mild lactic notes. Ripe yellow fruit (yellow apple, pear, white peach), butter & almond. Sugar: 2.6gr / l, acids: 5.7gr / l & alcohol 13.00% vol Alc.

Gastronomy: Fatty fish, grilled fish, meat dishes (veal, pork, poultry), risotto & pastas (no tomato).
